  • 1/4 cup pine nuts
  • 1/2 cup Feta cheese - crumbled
  • 1/4 lb sliced mushrooms
  • 1 cup whole wheat croutons
  • 1/4 cup Rhode Island Organics™ Omega-3 Ginger Plum Dressing/Marinade

Spinach Salad with Ginger Plum Dressing
Instructions
  1. toast pine nuts and olive oil in small skillet on medium heat until nuts darken slightly, do not overcook; remove from heat and place in small bowl to cool
  2. rinse and dry baby spinach
  3. arrange baby spinach, red onion, mushrooms & Feta cheese on plates (or in large salad bowl)
  4. sprinkle pine nuts and croutons
  5. drizzle with Rhode Island Organics™ Omega-3 Ginger Plum Dressing/Marinade
  6. serve and enjoy!
