  • 4 large leaves Romaine lettuce - 2-3 large leaves (or iceberg lettuce)
  • 4 Plum or cherry tomatoes - halved
  • 1/2 Red onion - thinly sliced and separated
  • 1/4 lb Feta cheese - crumbled
  • 4 Tbsp RI Omega-3 Honey Mustard Dressing

Instructions
  1. steam or boil peeled & de-veined shrimp until just cooked (do not overcook) 2-3 minutes
  2. let shrimp cool over ice or in refrigerator on plate
  3. spread layer of lettuce; add tomatoes and sliced onion; sprinkle crumbled feta cheese
  4. top with cooled shrimp
  5. drizzle with Rhode Island Omega-3 Honey Mustard Dressing
  6. Enjoy your omega-3 rich food
